Lately my go to dinners have been stuffed chicken breasts. Whatever I can find in the fridge goes into the chicken.
The other night I had some pesto and mozzarella cheese to use up. I sliced a chicken breast in half (butterfly) and pounded out each side. Then spread a thin layer of pesto and mozzarella cheese and rolled up the chicken. I dipped them in bread crumbs and put in the oven for 25-30 minutes at 350 degrees.
For sides we had orzo with pesto and roasted broccoli with parmesan cheese.
It was a delicious and easy meal. I have also stuffed chicken with feta and sundried tomatoes; it turned out great too.
